This is a super quick idea for lunch and a great way to get some oily fish into your diet. Possibly the tastiest / easiest use for smoked mackerel that I know and something to whizz up at the start of the week for a fuss free lunchbox option during the week.
In the UK, it's recommend that we aim to eat two portions of fish a week in our diets - one of which ideally should be oily. The reason? Oily fish are a great source of omega-3 - a group of essential fats which our bodies can''t make, which must come from our diets instead.
Ingredients
3 fillets mackerel (about 300g)
1 tub light cream cheese
Juice of 1 lemon
Handful chopped parsley
Black pepper
Method
Skin the mackerel and discard.
Put the mackerel into a food processor (I used a nutribullet) with all the other ingredients except the parsley.
Whiz until you have a smooth pate and stir through the chopped parsley
Store in the fridge until ready to eat
Enjoy over crackers toast or use as a dip for veggies
