EASY SMOKED MACKEREL PATE


This is a super quick idea for lunch and a great way to get some oily fish into your diet. Possibly the tastiest / easiest use for smoked mackerel that I know and something to whizz up at the start of the week for a fuss free lunchbox option during the week.


In the UK, it's recommend that we aim to eat two portions of fish a week in our diets - one of which ideally should be oily. The reason? Oily fish are a great source of omega-3 - a group of essential fats which our bodies can''t make, which must come from our diets instead.

Ingredients

  • 3 fillets mackerel (about 300g)

  • 1 tub light cream cheese

  • Juice of 1 lemon

  • Handful chopped parsley

  • Black pepper


Method

  1. Skin the mackerel and discard.

  2. Put the mackerel into a food processor (I used a nutribullet) with all the other ingredients except the parsley.

  3. Whiz until you have a smooth pate and stir through the chopped parsley

  4. Store in the fridge until ready to eat

  5. Enjoy over crackers toast or use as a dip for veggies
